How packaging influences milk flavour?

Milk is more susceptible to packaging-related off-flavours than many other beverages because of its mild, delicate taste.

Few studies have addressed the effects of package material in the absence of light on contributions to fluid milk flavour.

Analysis published in the Journal Of Dairy Science shows package type influences fluid milk flavor and these effects are greater in Skim Milk compared with Whole milk.

Besides light oxidation, milk’s taste can be impacted by the exchange of the packaging’s compounds into the milk and by the packaging absorbing food flavours and aromas from the surrounding refrigeration environment.

Milk packaged in paperboard cartons, in fact, showed distinct off-flavours as well as the presence of compounds from the paperboard. According to the findings, those milks had higher concentrations of packaging/refrigerator taint volatile compounds such as styrene compared to milks filled into HDPE, PET or glass. The more permeable barriers of paperboard cartons may be the cause of incresed concentrations of styrene which migrate into the milk from the refrigeration environment.

The final results show that, while glass remains an ideal container for preserving milk flavor, plastic containers provide additional benefits while also maintaining freshness in the absense of light exposure.

When it came to the consumer trials, the participants detected differences between milk filled into cartons and glass, but couldnt detect differences between PET and glass, or HDPE (High Density Poly Ethylene) and glass. Skim and whole milks filled into PET, HDPE and glass were found to be similar in flavour profile.
